---- -- Innovation of the Week: Former Fringale chef Jean Marc Gorce and his wife, Casimira, have been going great guns with their lovely and well-priced handmade chocolate truffles. They've been working out of XOX Truffles, a tiny storefront at 754 Columbus Ave. (near Greenwich Street) where they make and sell their truffles, and serve morning pastries and coffee and tea drinks. Gorce's XOX truffles come in several flavors, including rum raisin, hazelnut, cognac and Scoop's fave -- caramel. Recently Gorce responded to a request from one of his vegan customers to make truffles with soy milk. We were afraid the vegan truffles might have a slight hint of grassiness from the soy but they don't because Gorce adds a dash of Madagascar vanilla. Like his other truffles, they're five for $1, a pound (about 80) for $16
